Make Birria Quesadillas with Fatima
On today's episode, Fatima is back with another delicious recipe and it's definitely one worth waiting for! Birria is a well-known street food, approached in many forms all over Mexico. The tender meat is shredded after boiled in a few but rich ingredients, dried chiles, and herbs. But of course, here at Olé Rico, we go the extra mile, resulting in an appetizing and very scrumptious Birria Quesadillas. The meat cooking process may take a bit to make so be warned; we recommend you take your time, it is worth it. But after that, your quesadillas are easy to plate and ready to serve! Happy eating!
12 dried guajillos
5 bay leaves
5 pepper cloves
4 garlic cloves
Chicken soup seasoning
Salt to taste
Chile de arbol powder (optional)
Start by putting your beef to boil along with an onion, 3 bay leafs and some salt. You’re going to let it cook for about 2 hours.
In the meantime, you’re going to prepare your salsa. Remove the seeds and stems from the guajillos and place them in a pot with water. Add the tomatoes, chicken seasoning, 2 bay leafs, garlic cloves, pepper seeds and the cloves. Let it cook for around 1 to 15 minutes.
After boiling your salsa ingredients you can go ahead and blend, add some of the boiling water. After blending, you are going to strain the salsa so we get a smoother texture.
You’re going to check your meat around 30 to 45 minutes before it is ready. You’re going to pour the salsa into the pot where the meat is boiling. You can take out the onion if you want. You can also check if your sauce needs more flavor. Fatima added a little bit of our Chile de Arbol powder to add some spice. You can now let it finish boiling for the time left (30-40 min)
One the meat is done you can shred it and put aside. Don’t throw away the meat broth!
Now you can start preparing your quesadillas. You are going to get the broth from the meat with the sauce and put some in a bowl because you’re going to use it to dip the tortillas in it.
After dipping the tortillas, place them on the comal and add your cheese to make the quesadillas and then add the meat. Serve your quesadillas with some diced onion and cilantro. You can dip them on the broth that was left from cooking the meat and dipping the tortillas. Happy eating!
